Dining venue in Canton is open once again

After a two-year hiatus, the former Canton Pub and Restaurant, located in downtown Canton, is serving up drinks and meals once again. Now known as Pauly’s Canton Pub, the popular dining venue is operated by Paul and Patti Stevenson of Spring Valley.

The Stevensons are no strangers to the restaurant business. Paul worked as the head cook at Susie’s Roadhouse in Ostrander for the past eight years. He has worked as a cook for more than 35 years at various dining establishments throughout the Midwest and the Rocky Mountains. Pattie has worked in the business for years with her mother who owned a restaurant in Michigan.

“I’ve always been interested in cooking, since I was quite young,” Paul explained. “I used to help my mom and grandmother, who both worked in restaurants. I never really gave it much thought, as far as making a career as a cook.”

Paul said the family liked to travel and while visiting Estes Park in Colorado, he was hired as a dishwasher at a restaurant. It didn’t take long before Paul was promoted to one of the cooks and has been cooking ever since.

Paul noted that being a cook and traveling seemed to go hand in hand. “Folks are always looking for cooks,” he said with a grin.

The Stevensons wanted to have a business of their own. They looked at a number of restaurants that were for sale in the area and contacted Roxanne Johnson of Harmony about the Village Square Restaurant in Harmony. That didn’t work out for them. But then they were contacted by Jamie Knutson of Canton, who had been high bidder when the Canton Pub was auctioned off this past winter.

Following some negotiations, the Stevensons and Knutson worked out a lease agreement, and Pauly’s Canton Pub opened for business several weeks ago.

Business has been brisk since they opened, Paul reported. They have been receiving good comments on the food, the service and also on the many improvements (both interior and exterior) that Knutson has made to the building.

“This has been a popular place for many years and being that it was closed for two years, people are very happy to have it open once again,” Paul said. “And with all the remodeling Jamie has done, those things have helped draw folks in. And once they are here, get a good meal, with good service, they’ll be back.”

Pauly’s Canton Pub specializes in all types of burgers, sandwiches and wraps. Friday night features their fish special and Saturdays alternate between barbecue baby back pork ribs and beef prime rib (both king and queen cuts).

“We don’t have a salad bar, but we are offering a number of different sides instead,” Paul noted. The sides include fries, mac and cheese, macaroni salad, coleslaw, baked beans and potato salad.

The grill at Pauly’s Canton Pub is fired up Wednesday and Thursday from 4 to 9 p.m., Friday and Saturday from 11 a.m. to 10 p.m. and Sunday from 11 a.m. to 8 p.m.

Pauly’s Canton Pub also offers a variety of beers and mixed drinks.
